This dinner takes a page right out Tucson’s culinary history book.
The Gastronomic Union of Tucson (GUT) is hosting a five-course Wild West Dinner at the Carriage House from 6 – 9 p.m. on Sunday, August 26.
If you’re not aware, GUT is the collaborative venture of some of the best and most-acclaimed chefs that helped influence Tucson’s UNESCO designation as a World City of Gastronomy.
All five courses of the menu are inspired by the Spanish traditions, indigenous cuisines, and foods brought over from European and Chinese settlers to reinterpret the Gastronomic scene from the 1800s.
Seating will be limited and is $75 per person. Tickets are available at gutucson.org.
Wild West Dinner Menu
First Course
- Hors d’oeuvres – corn and cactus fruit gazpacho, Old Pueblo chicken roulade, cowboy cornbread chili, and Chinese chorizo steam buns.
Second Course
- Citrus-Brined Apache Trout – with hominy, corn consommé, fava beans, almond chile foam.
Third Course
- Chuck Wagon Stew – with goat (three preparations), braised turnips, goat fat cake, squash chips, and bone broth.
Fourth Course
- Saloon Beer and Coffee – smoked marrow, chiles, onions, pickles, and foie gras.
Fifth Course
- Mesquite Bacon Velvet Cake – pecan dacqouise, barrel cactus fruit jam, goat milk tarragon Bavarian cream, and chiltepin tuile.

More about MattAt a very young age, Matt Sterner was gifted with the artistic ability to masterfully roll a burrito to the highest of standards, but the wrapped medley of delicious innards wasn’t his first love. Matt’s first true love was a combination of reading, writing, and creating.
