Italian 100% scratch kitchen Primo at the JW Marriott Tucson Starr Pass Resort & Spa is hosting a four-course wine dinner from 7 – 9 p.m. on Tuesday, March 21.
The featured wine of the evening will come from Italian vineyards Pieropan and Allegrini.
Chef de cuisine Roderick LeDesma adds a flavorful twist to braised lamb shank with curried cauliflower and arugula pistachio pesto. The risotto will be red from dry Amarone wine and luxuriously rich from bone marrow.
Spanish guitarist Gabriel Francisco will enchant the dinner with live tunes.

- Kushi Oysters – watermelon hot sauce, lime, granita
- Paired with Soave Pieropan
Second Course
- Amarone Risotto – bone marrow, grana padano

- Braised Lamb Shank – creamy polenta, curried cauliflower, arugula pistachio pesto

- Salted Caramel Tart – whipped crème fraîche, dark chocolate ganache
