The next R&D Dinner arrives on Tuesday, November 4, 2025, from 6 to 9 p.m. at Mojo Cuban Kitchen & Rum Bar.
This one-night event brings chef Janos Wilder together with the Mojo culinary team for an inspired six-course collaboration that highlights Latin flavors, heritage ingredients, and creative pairings.

Six Courses of Flavor and Craft
The six-course tasting menu includes:
- Hamachi Leche de Tigre with candied limes, candied jalapeños, pickled ginger, and avocado
- Bean Salad featuring local heritage beans, vinaigrette, and farmers cheese
- Ropa Vieja Mini-Empanada served with olive chimichurri
- Pork Belly cured in mojo with a red wine citrus gastrique and pickled pears
- Pan-Seared Striped Bass with coconut milk pineapple rice, caramelized pineapple, and minted mango mojo
- Cortadito Cake made with chocolate espresso cake, cortadito diplomat cream, hazelnut brittle, and prickly pear sauce
