Some say it’s the most notable form of lunch or the best meal between two slices of bread, but the folks running the new food truck, Parkie Sandwich, are all ears when it comes to describing their sandwiches.
The new food truck, owned and operated by Nevin Cornwell and Ashley Marciano, has hit the asphalt running in an old school bus turned mobile sandwich restaurant. So far, it’s been a success. It’s bussin’, so to speak.

“A huge thank you to Crooked Tooth Brewing, The Pit Tucson, and everyone who came out to support us and have a sandwich,” the duo shared on Instagram. “After years of dreaming and planning, it is a bit surreal to finally be open.”
So, the wheels on the bus are going ’round and ’round… and so are the compliments from hungry eaters.
One of the highlights on the menu includes the porchetta — a moist and crackling-coated pork roast Cornwell and Marciano are making themselves. All sandwich ingredients are gluten-free except for the bread and there’s even a vegan sandwich on the menu. However, let them know you’d prefer a gluten-free meal and they’ll substitute it with bread from Gourmet Girls.

They also have a “Sweet of the Week” treat like chocolate chip cookies and scotcharoos. Take a gander at the current menu, which is always subject to change.

- The Parkie Porchetta – crispy Italian roast pork belly, caper mayo, pickled onion, and arugula on a toasted baguette
- The Pro Move – smoked turkey, bacon, Pepper Jack, Swiss cheese, avocado, grilled onion, shredded lettuce, and garlic dijonnaise on a toasted hoagie
- Where’s the Beef? – yuba simmered in a rich mushroom and charred onion au jus, served on a baguette topped with giardiniera
- Sides include chips, pesto pasta salad, and sodas
