Demo Cooking Class & Pop-Up Dinner – Florianópolis, Brazil
6 – 9 p.m. Friday, July 21 • $80 per person plus tax and gratuity
The Around the Globe Culinary Tour 2017 continues with a class from chef Janos Wilder about Florianópolis, Brazil, which was designated as a UNESCO City of Gastronomy in 2014. Florianóopolis is also known as “Brazil’s Quality of Life Capital”, the “Best Brazilian City for Entrepreneurship” and “Brazil’s Oyster Capital.” Guests will enjoy a five-course dinner and beverages.
Florianópolis Menu Choices
Appetizers
- Beachside Tomato and Hearts of Palm Salad – tomato, cucumber, oranges, spicy, sweet ‘n’ sour basil/passion fruit emulsion
- Floripa Dog – Ben Forbes’ smoked hot dogs, meaty tomato sauce, mustard, bacon, Grana Padano, corn, peas, shoestring potatoes
- Florianópolis Chicken Streetwalker – crisp fried boneless chicken croquettes with fresh herbs + spicy red pepper sauce, Manzanilla olives + radishes
Main Courses
- Feijoada with Forbes’ Linguiça, Beef Cheeks, Bacon, Spares + Picanha – on white rice with orange + scallions
- Moqueca de Peixe – Brazilian coconut milk + ginger mixed seafood stew with shrimp, mussels, calamari, salmon, scallops, hearts of palm and tomato
- Garlic Marinated Grilled Grass-Fed Picanha Steak – with basil chimichurri, olive crushed potatoes, churrasco shredded carrot salad
Desserts
- Passion Fruit Panna Cotta – cherry + blueberry sauces, fig butter cookies
- Brazilian Flourless Chocolate Fudge Cake – coffee ice cream, dulce de leche sauce, candied hazelnuts

Chef Janos Wilder will teach about Shunde, China for another Around the Globe Culinary Tour 2017 event. Located along the Pearl River Delta, Shunde is one of the pillars of Cantonese cuisine. Guests will enjoy a five-course dinner and beverages.
