¿Que se obtiene al mezclar la birria mexicana tradicional y riquísima en sabor con esa manera tan creative y suculenta de cocinar de la Baja, específicamente de Tijuana? El resultado es la exquisita Quesabirria.

Un manjar contemporáneo al mundo gastronómico, la quesabirria se ha convertido en una joya que posa a la perfección para fotos de Instagram y es una sensación de las redes sociales. Con capas de queso, birria y verduras frescas, la quesabirria generalmente se disfruta solita o sumergiéndola en su caldito.

A medida que su popularidad aumentaba, los amantes de la comida basada en plantas estaban tan emocionados por probar las quesabirrias al igual que cualquier otro aficionado de la gastronomía. En Tucson, la comunidad vegana esperaba pacientemente para ver que restaurant iba a materializar la esperada quesabirria. Y, finalmente, algunos restaurants locales lo lograron, y vaya que lo lograron de maravilla.

Afortunadamente, Tucson ha sido bendecido con una opción de quesabirria vegana, aparentemente, en los cuatro puntos cardinales. Así que, por supuesto, me aseguré de preguntarle a los chefs y dueños, ¿cuál fue su inspiración detrás de agregar una versión vegana de este platillo tan famoso a su menú?

“Pensamos mucho en los platillos que queríamos ofrecer en Charro Vida durante los momentos de clausura por el COVID.” Dijo Ray Flores. “Platillos que fueran fáciles de recoger. Durante ese tiempo mucha gente ya hablaba de las quesabirrias, fue entonces que desarrollamos una opción basada en plantas usando yaca, queso vegano, y nuestro delicioso consomé de achiote y clavo que acompaña a la quesabirria. Ya se han convertido en nuestro platillo mas popular.”

Lograr el balance perfecto de ingredientes de calidad y darle al cliente lo que pide no siempre es sencillo.

“Actualmente las quesabirrias son tan populares que ¿por qué no las agregamos a nuestro menú?” Nos contó Joselyn Gamez. “Nuestro menú es 50% vegano y es cuando pensé, tengo que agregar una opción vegana. En septiembre del 2021, nuestra quesabirria vegana hizo su debut; un buen queso es una parte vital del platillo y no fue fácil elegir el correcto para la opción vegana. Pero después de varios intentos, ¡lo logramos!”

“La preparación de la birria es una tradición de mi familia ya que yo nací en Sinaloa, México” Nos comentó Herminia Serino. “Crecí viéndolo como un estilo de vida. Uno de mis primeros trabajos fue en la birriería de mi tío en Sinaloa; cuando tenía 10 años lavaba los platos y ya ayudaba con el horno enterrado todas las tardes.”

Para las chicas de Ensenada, se trataba de ser inclusivas.

“Honestamente las personas que van a comer con sus familias usualmente se sienten limitadas en sus opciones a la hora de ir a comer algún lugar.” Dijo Malena Alvarez. “Muchas personas empezaron a preguntar si teníamos opciones sin carne que no fuera quesadilla. Decidí agregar quesabirrias veganas y otras opciones veganas para que todos se sintieran incluidos. Busqué recetas e ingredientes hasta que encontramos la forma de ofrecerles lo más cercano posible a las opciones regulares pero veganas y con gran sabor. Ahora las familias o los grupos de amigos vienen y todos tiene la opción de disfrutar unos buenos tacos por igual.”

José Contreras, chef and owner of @Ameliastucson, is headed to New York City to cook alongside chef Alam Méndez of Washington, D.C.‘s Apapacho Taqueria for a collaborative dinner at the James Beard Foundation’s Platform at Pier 57.

The Aug. 11 dinner will celebrate the culinary traditions of Sonora and Oaxaca through a multi course menu centered on heirloom corn, traditional masa, and coastal flavors. Guests will also enjoy a cocktail reception, Mijenta Tequila pairings, and a Q&A with both chefs. The event begins at 6:30 pm at @Pier57.nyc.
