Albondigas at Pasco Kitchen & Lounge
Pasco Kitchen & Lounge, located in Geronimo Plaza near Main Gate Square at 820 E University Blvd, will host a four-course dinner April 14 featuring dishes from the Mexican state of Oaxaca. Also being featured with the dinner, is a tasting of Del Maguey, single village mescal, which, according to Del Maguey, “supports village producers (palenqueros) the freedom to produce mezcal using ancient practices that the indigenous people of Oaxaca have been employing before the Spanish conquest.”
Mescal, tequila’s feisty, more illicit primo, is produced from the agave plant, however has a smokier finish and more complex flavor profile.
Oaxacan cuisine is often touted as the most varied cuisine in Mexico due to the state’s multiple climates and cultures.
Noche Oaxaca Menu
Course 1
- Caldo De Piedra (Stone Soup) – Green chile, coriander, shrimp, red snapper in river stone boiled seafood broth
Course 2
- Fideo con Vegetales Y Chicharon (Thin Noodle, Vegetables, & Crispy Pork) – Homemade pasta, spring veg, herbs, BBQ smoked pork belly and shoulder
Course 3
- Barbacoa de Cordero Con Mole Negro (Banana Leaf Wrapped & Roasted Lamb) – Pit roasted lamb, charred spring onion, radish, lime, chile, Oaxacan molé
Course 4
- Mezcal Con Chocolate Y Pastel de Elote – Spiced hot cocoa and coffee beans with sweet corn cake, and crema de mescal
