“O Canada! [Not] our home and native land!”… but we’ll eat your delicious food. Our friendly neighbors to the north are celebrating Canada Day on July 1 and we’ll take any excuse to indulge in French fries, cheese curds, and loaded tater tots while we’re at it.

It’s not poutine, but it’s a dang close second. These Wisconsin cheddar curds are flash-crisped and served with the Hub’s own sriracha ketchup. Caution: These curds are so squeaky you may need earplugs.

This Iron Chef Tucson worthy poutine is no ducking joke. With double-blanched pommes frites, this bad boy is topped with cheese curds, duck confit, roasted duck gravy and cracklins. You can add pan-roasted Hudson Valley organic foie gras for $6 per ounce.

The Aug. 11 dinner will celebrate the culinary traditions of Sonora and Oaxaca through a multi course menu centered on heirloom corn, traditional masa, and coastal flavors. Although El Conquistador licenses the Hilton brand, it’s owned and operated by a local company. The culinary team sources much of its meat and produce from Arizona.
