Celebrate Earth Day with vegetables and fine dining.
Maynards Market & Kitchen is hosting an Earth Day Vegetarian Dinner at 7 p.m. on Saturday, April 22.
The dinner features three courses with optional wine pairings.
Executive chef Brian Smith will feature bountiful fresh produce such as spring peas, heirloom tomatoes, strawberries, and purslane.

First Course
- Heirloom Tomato Salad – orange blossom-balsamic vinegar, Queen Creek olive oil, fennel jam, purslane, mezcal-infused watermelon, radish, benne seed tuille
- Paired with The Seeker, Sauvignon Blanc, Marlboro, NZ
Second Course
- Red Beet “Steak” – braised endive, coconut-ramp soubise, spring pea, roasted oyster mushroom, vegetable-black truffle demi-glace
- Paired with Planet Oregon, Pinot Noir, Willamette, OR
Third Course
- Roasted Strawberry, Lime Shortbread, Pink Peppercorn, White Chocolate Sorbet
