Vegetable Sushi Rolls With Sesame Ginger Sauce

As you might have guessed, my favorite sushi does not include any raw fish. As a matter of fact, a lot of sushi served in the U.S. doesn’t contain any raw fish at all. Delicious, satisfying and healthy, create your favorite combinations using seasonal raw or pickled vegetables along with tofu, spreads or sauces. With a little practice, your sushi rolls will look just as good as they taste.

Although brown rice is not traditionally used for sushi in Japan, I decided to bend the rules a bit. Easily interchangeable and still very much tasty, swapping out refined carbs for whole grain substitutes has become one of the most popular healthy lifestyle suggestions around. Not only will you benefit tremendously with over four times the amount of fiber, more protein and less calories, your taste buds will love the perfect balance of textures and flavors coming together in each bite.

Many thanks to Sleeping Frog Farms for providing all the vegetables in our sushi rolls. All remaining ingredients provided by Food Conspiracy Co-op. Remember, if you’re hoping to avoid GMOs, it’s important to purchase soy (aminos, miso), corn (vinegar, sugar), and beet sugar (regular sugar) all organic.

You can find hand-made vegetable sushi at Yoshimatsu Japanese Restaurant or add a little zest with the raw sushi appetizer from The Tasteful Kitchen.

Weekend brunch at @losmilicsvineyards🌞

Los Milics Vineyards Tucson is now serving brunch Saturdays and Sundays from 11am-4pm at its downtown Tucson tasting room, with dinner continuing from 4-9pm. 

The brunch menu is built to pair with Los Milics’ estate-grown Sonoita wines, plus curated flights, cocktails, and local beer. Expect house-made focaccia, charcuterie, fried halloumi, salads, eggs in purgatory, breakfast burritos, a K4 Ranch burger, a Bourdain sandwich, a confit BLT, and plenty of sweet options.

There are also vegan choices, including avocado toast and focaccia French toast, plus dairy-free oat milk gelato.

@Casaveratucson opens Aug. 12 at 7265 N. La Cholla Blvd., bringing regional Mexican cuisine to the former Tamarind space.

The 7,000-square-foot restaurant seats 200 guests with a large patio, and the design draws inspiration from a warm, old-world hacienda. The family behind Casa Vera is also known locally for Guadalajara Original Grill.

Casa Vera will be open daily from 3-9 p.m. Reservations are available through @opentable or by emailing reservations@casaveratucson.com.
