Bacon lovers, meet the Bacon-Wrapped Percheron Burro from WhataBurro.
The Percheron features a filling of carne asada, tomato, grilled onion, avocado, mozzarella, and a touch of mayo.
Burros are $7.40 for a medium size and $9.40 for large. But for a couple more dollars you can ask them to wrap the entire burro in bacon.
While bacon-wrapped anything is easy to love, the technique is tricky. It’s easy to accidentally get chewy bacon that’s difficult to bite off without making the whole thing fall apart.
WhataBurro’s talented burro-makers get it just right — the bacon is crisp yet delicate enough to yield easily with each bite. The burrito is obviously fatty with all that bacon, but not as greasy as you’d expect.
The filling is worth a trip even without the bacon. The tender carne asada and other ingredients mingle in a delightful ratio that doesn’t even need a trip to the salsa bar. But the salsas are also expertly seasoned, so you might as well indulge in everything.
