Abbey, Jax Owner Brian Metzger to Launch Gio Taco

Metzger Family Restaurants has announced plans to open Gio Taco. Named for restaurateur Brian Metzger’s stepson Giovanni, the 2,400 square-foot, fast-casual restaurant will be located at 350 E. Congress Street on downtown Tucson’s East End, in the new Cadence development on the corner of E. Congress Street and S. Toole Avenue.

Gio Taco’s menu will pay homage to cultures known for vibrant culinary and community traditions. “Whether their foundations are from the streets of Havana, the gardens of Costa Rica, the beaches of Hawaii, or the coast of Puerto Rico, our tacos will be intentionally designed to ignite a sense of adventure among our guests,” said Metzger.

“While we’re surely not asking our guests to forget everything they know about tacos, we’ll be introducing them to a new attitude and concept of what tacos can really be,” Metzger said. “Our culinary team will basically be creating a ‘no-rules’ kitchen, and everything we do will be guided by our pledge to provide a ‘totally unexpected’ experience.”

Metzger’s long time colleagues Sonia Sotinsky and Miguel Fuentevilla of FORS Architecture + Interiors will design the space, and general contractor Jamie Olding of Building Excellence will oversee the construction.

Slated to open in November, Gio Taco will be the company’s third eatery in Tucson, joining Jax Kitchen, named for Metzger’s son Jack, and The Abbey, named after Metzger’s daughter, Abby.
