7 Course Wine Dinner to support Breast Cancer Research (MENU)

This feast features five glasses of wine from France.

In support of breast cancer research, the Ritz-Carlton at Dove Mountain is hosting a multi-course wine dinner from 6 – 9 p.m., Thursday, October 3.

The resort’s award-winning culinary team at CORE Kitchen & Wine Bar are the minds behind the dinner that’s supporting the American Cancer Society’s Making Strides Against Breast Cancer Walk.

The meal is going to be huge, too, with five glasses of wine from France.

Also, all of the chefs will be decked out in pink chef coats specially designed for the occasion, which will be worn for Breast Cancer Awareness Month.

Amuse Bouche
  • Prickly Pear Cactus Amuse 
First Course
  • Poached Shellfish – with Caviar, Mount Rose Apples, Sea Beans, and Tomato Water
  • Paired with Margaine Champagne Brut Rosé 
Second Course
  • Fig with Speck Ham – and Wild Fennel Confit, Goat’s Milk, and Honey
  • Paired with Domaine Franz Chagnoleau Mâcon-Villages “Clos Saint Pancras”
Third Course
  • Lobster Tail – with Barrel Cactus Beurre Blanc and Mesquite Tuile
  • Paired with Daniel Chotard Sancerre
Fourth Course
  • Duck Breast – with Croquette, Kohlrabi Purée, and Cherry Gel
  • Paired with Mongeard-Mugneret Bourgogne Rouge
Fifth Course
  • Beef Cheek – with Blackberry Mole and Cholla Buds
  • Paired with Paul Jaboulet Aîné “Le Grand Pompée” Saint-Joseph
Dessert
  • Milk Chocolate Rocher – with Hazelnut Crunch, Mandarin Orange Sorbet, Praline Mousse
  • Paired with a dessert wine that’s TBA
