Farmers Market Profile: Sabrina Metherell of Global Fusion

Global Fusion’s Sabrina Metherell knows a thing or two about making a delicious brownie, having been a pastry chef for over twenty years.

Originally beginning with a partner, Metherell held down a second job while the business found its footing. When that partner moved away, Metherell made the decision to dedicate herself full time to Global Fusion’s success.

“I bake seven days a week,” said Metherell. “I usually work ten hours a day. I bake one day and deliver to a store or take it directly to the market the very next day.”

In addition to Global Fusion’s presence at local farmers markets, Metherell’s products can also be found at Savaya Coffee shops and Planet Smoothie.

Using all natural ingredients and no preservatives, Metherell bakes a combination of traditional goods, as well as gluten-free and vegan varieties. Each week she mixes up her market offerings, but a few  staples that can always be found.

“I always make Magic Bars, Pecan Pie Bars and a variety of brownies,” she says. “We also have cobblers with different kinds of fruit. When I can, I bring sticky buns, as well. At Savaya and Planet Smoothie, I typically make organic muffins and danishes.”

As the heart and soul of the business, Metherell bakes everything herself. In an average week, Global Fusion sells around 300 products at the farmers markets and 250-300 items at retail shops. She’s not entirely alone, though. Metherell’s husband and cousin are both big parts of the business.

Global Fusion’s customer favorites include – from the vegan and gluten-free product line – the Magic Bars, which consist of an ideal combination of chocolate and coconut. Another crowd pleaser is the German Chocolate Cake Brownie. The gooey, rich dessert has earned its market following.

Metherell is humble about her success and talents. Her enthusiasm for what she does comes through strongly by just looking at the care and affection she puts into each pastry.

“I do this because I love it. I love baking and making delicious things for people to enjoy. It is all about the love that goes into my product.”

Global Fusion can be found at several of the FoodInRoot farmers market locations. Look for them on Saturdays and Sundays at St. Philip’s Plaza, UMC on Fridays, the U of A Market on Wednesdays and at the Tucson Mall on Monday, Tuesday and Friday.

Although El Conquistador licenses the Hilton brand, it’s owned and operated by a local company. The culinary team sources much of its meat and produce from Arizona.
