Food Truck Friday: Toy’ Comiendo Tacos de Cabeza

For years, I’ve passed by this food truck without stopping, but curiosity finally got the best of me and I gave it a try. 

Owner Julio Cesar Quevedo has been running his food truck, Toy’ Comiendo Tacos de Cabeza, for 17 years. In 2005, he migrated from Mexico to create a better life for himself and his family of five. Despite having no experience in a restaurant or food truck, Quevedo has 20 years of experience as a butcher.

“I never thought of doing this, running my own food truck, but when I was given an opportunity, I took it,” he added.

After discussing it with his wife, who is skilled in the cooking department, and their oldest son, who was working at El Güero Canelo at the time, the Quevedo family went all in on opening the food truck in 2007. 

At first, the menu was simple — primarily cabeza and birria — but they eventually expanded it for various reasons. 

“My wife created the menu, and later we decided to add more items that kids would like,” said Quevedo. “If they don’t like tacos, we’ve included tortas and other foods so the whole family could enjoy their meals and have something different.”

Originally named El Tacomiendo, Quevedo had to change it due to another existing business. However, it wasn’t hard to think of something new — an overheard phone conversation from a customer sparked inspiration for the name. 

“When the customer was eating and talking on the phone, they said, toy comiendo,” he said. “I laughed out loud and everyone else thought the way he said it was funny, too. So, we decided to go with that.”

 “Toy” is an informal way of saying “estoy,” meaning “I am” or “I’m,” and “comiendo” means “eating.”

The food truck menu has the basics like breakfast burritos (one of my favorites includes machaca, potatoes, and eggs), but then you’ll also find some not-so-commonly-found options like labios (beef lips) and lengua (beef tongue). Make your meal a combo and they’ll toss in rice and beans!

After scanning the menu, though, I had to try the Torta de El Chavo, which is inspired by the beloved character from the 1970s Mexican sitcom “El Chavo del Ocho.”

 “My wife decided to add it,” Quevedo laughed. “Most of my customers have seen the show, yet they ask what’s in it. I always ask them, ‘What was one food El Chavo always asked for?’ Then they remember.”

El Chavo loves ham tortas. Surrounded by bolillo bread, the sandwich is buttered and then toasted for a smooth, crispy texture. Inside, this masterpiece is layered with mayo, lettuce, tomato, avocado, ham, and cheese. 

What surprised me the most was the cheese! It’s gooey, it’s delicious, and since it’s melted between two slices of ham, a wonderfully stringy effect steals the show. I’ve never encountered that in a torta before — I highly recommend trying it.

The food truck is open from 7 a.m. – 2:15 p.m. daily (subject to change).
