Agave Heritage Festival Dinner
5 – 6:30 p.m. Friday, May 5 • $138 (tax and gratuity included)

Chefs Janos Wilder and Brian Smith will partner for a four-course agave-themed dinner paired with Don Julio cocktails.
Proceeds will benefit Native Seeds/SEARCH.

Hand-Passed Appetizers
- Charred Onion Sope – Top Knot duck, mole manchamantel, queso fresco, radish
- Coal-Roasted Vegetable Empanadas – smoked goat cheese, tomato
- Green Tomato Gazpacho – achiote-crema, Guaymas prawns, Sal de Chapulines
First Course featuring Chef Janos Wilder
- Pan-Seared Cabrilla – pipian rojo, lime cilantro aioli, the Three Sisters and Cousin Cholla
- Vegan option: Spring Garden Tostada – spicy Tepary beans, radishes, pickled cholla buds, heirloom carrots, poached garlic, fava beans, roasted corn vinaigrette, flowers
- Cocktail pairing: Don Julio Reposado, celery lime syrup, orange juice, lime
Second Course featuring Chef Brian Smith
- White Sonoran Wheat-Arizona Corn Fried Quail – fermented tomatillo jam, purslane, jalapeno, shaved radish
- Vegan option: White Sonoran Wheat Berry Salad – fermented tomatillo jam, purslane, jalapeno, shaved radish
- Cocktail pairing: Don Julio Blanco, ginger almond agave syrup, lemon, AZ Bitters Lab “Orange Sunshine” bitters
Third Course featuring Chef Janos Wilder
- Grilled Beef Rib Eye Tampiqueña – frijoles maneados, chiles rajas, salsa fresca, cheese enchilada, Anita’s flour tortillas
- Vegan option: Whole Roasted Blue Oyster Mushrooms – refritos, chiles rajas, salsa fresca, flour tortillas
- Cocktail pairing: Don Julio Anejo, Carpano Antica, AZ Bitters Lab “Mi Casa” bitters
Fourth Course featuring Chef Brian Smith
- Pastel de Elote – avocado-lime ice cream, plantains with piloncillo, orange, mescal, crispy corn
- Cocktail pairing: Don Julio 70, Cointreau, walnut bitters

Chefs Janos Wilder, Anthony Coluci, and Devon Sanner will team up for a four-course meal with agave-inspired mimosas.
Proceeds will benefit Mission Garden.

- Avocado Louis – Gulf stone crab salad, cilantro pistou, cucumber, smoked egg yolk, radish, corn tortilla
- Mimosa pairing: pink grapefruit with Del Arbol chile infused agave syrup
Second Course featuring Chef Janos Wilder
- Chorizo Chilaquiles – Guaymas shrimp salpicón mojo de ajo, mole verde
- Vegan option: Mushroom and Squash Chilaquiles – salpicón, mole verde
- Mimosa pairing: almond-infused agave with lime and black pepper
Third Course featuring Chef Anthony Coluci
- Steak and Eggs – 40-minute egg, green chimichurri, fried garlic, stewed Anasazi beans, queso cotija, flour tortillas served family style
- Mimosa pairing: jalapeño-infused agave with orange juice and lemongrass
Fourth Course featuring Chef Devon Sanner
- Julie Shipway’s Meyer Lemon Curd – kumquat jam, pecan sandies
- Vegan option: Mango Sorbet and Ginger Float – mint syrup
- Mimosa pairing: blackberry-infused agave with lemon and pearl dust
