Now that Baja Cafe Marana is open at Ina and Thornydale, their weekly creations haven’t disappointed.
While they’ve set the bar high with their signature Snickerdoodle Pancake, this weekend’s Tiramisu pancake gives it a run for its money.
A tiramisu batter pancake is topped with ladyfingers, mascarpone custard, whipped cream, cocoa powder, and a drizzle of chocolate.
The custard tastes like melted vanilla ice cream in the good way. The ladyfingers don’t soak it up thoroughly, so it’s best enjoyed with a cup of coffee.
