Spicy kimchi is great washed down with a cold beer, but what about mixing the two?

Ermanos Craft Beer & Wine Bar is hosting a release party for its new Funk Seoul Brother kimchi beer at 5 p.m. on Tuesday, September 13.

The beer is the result of the Ermanos staff’s growing obsession with fermentation in various applications.

“I’ve never come across a kimchi beer,” said Ermanos co-owner Eric Erman.

After Erman’s curiosity was piqued, he brought a batch of Ermanos’ house-made kimchi starter to the laboratory at 1912 Brewing Co. They found a bacteria batch that was propagated to a souring culture.

“The results were the opposite of what we expected,” Erman said. “Instead of acidic, it became a tropical bomb of tangerine and mango.”

The resulting beer is a mixed fermentation ale at 5.9% alcohol by volume with added coriander and sea salt. Though the two flavors are associated with a gose, they actually complement the kimchi flavor.

Since the event is on Taco Tuesday, the featured taco will be pulled pork with fermented pineapple and kimchi crema. The pineapple was also fermented with the house kimchi starter, creating a Pop Rock-like effervescence.
