Ramen food truck Fat Noodle Ramen House will open its brick-and-mortar restaurant at 811 E. Wetmore Rd. on Monday, August 6.
“The opportunity came along and it felt right,” said Ramon Gonzales, owner and operator of Fat Noodle.
Regulars of the food truck around town won’t need to worry though, as the food truck will still operate.
“The truck is what got us here and we love the support we get from the local breweries, tap rooms, and lunch spots,” Gonzales said.
Fat Noodle’s new 1,800-square-foot-space sits at the base of the Seasons student apartments east of Starbucks and McAlister’s Deli. While the previous tenant was Brick & Bell Cafe, the revamped interior bears no semblance to a coffee shop. Pendant lamps, slick shades of gray, and accents of wood and steel create the feel of a modern ramen house.
Seating options vary with room for about 60. An L-shaped communal table sits in the center of the restaurant, surrounded by traditional tables. Patio seating will be available once the weather cools down.

Menu items will range from $5 to $12. Customers can expect favorites from the food truck along with several new items.
“We’ll have new ramen options including a vegetarian ramen, snacks like tempura, karaage, house-made gyoza, and a few surprises,” Gonzales said.
Beer will be available at the opening, while sake will be available soon.
Tentative operating hours are 11 a.m. – 9 p.m. daily.
Fat Noodle opened as a food truck in July 2014. Their from-scratch approach, including noodles made with local Sonoran wheat, earned it a loyal following.
