Coop by Cowpig blends approachable comfort classics with Tucson style. The family-owned restaurant, founded by Thomas Castro, brings his father’s food truck legacy indoors.
Inspired by Javier Castro’s beloved Cowpig food truck, Thomas created Coop with one mission: deliver the best chicken in town. He perfected his recipe over the years. Now, every bite bursts with care and no shortcuts.
From Food Hall Favorite to Fourth Avenue Staple
Originally located inside American Eat Co., Coop quickly gained a loyal following for its chicken tenders and scratch-made sides.
After outgrowing the food hall, Coop opened its own location at 429 N. Fourth Ave. The grand opening on April 20, 2024, marked a new chapter.
Now, diners can enjoy the full Coop experience in a vibrant, standalone space on one of Tucson’s most walkable streets.
The Star of the Menu: Buffalo Ranch Fries
While Coop offers a wide range of chicken options, one item steals the show: Buffalo Ranch Fries.
The dish starts with crispy, golden fries. Then, they’re generously tossed in Coop’s signature Buffalo sauce. A drizzle of creamy house-made buttermilk ranch finishes the concoction. Each bite delivers a fiery, tangy crunch.
