A proper smash burger is more than just a smashed beef patty. Tucson food truck Rae’s Burgers does it just with proper technique.
First, the smashing itself requires finesse. A firm smash maximizes contact with the hot griddle, increasing the surface area for the Maillard reaction, yielding a lovely deep mahogany crust rich in umami. Tapering the edges thinner provides lacey, crunchy bits of beef.

While the thin patty isn’t as juicy as a thick patty, you maximize the intense seared beef flavor. But when done right, it won’t taste dry. Add the classic gooey American cheese and tangy special sauce, and lightly sweet grilled onions for a punch in the gut of nostalgia.
