The Yukon Gold Potato & Pecorino Pizzetta (say that three times fast) features slices of potato, mozzarella, roasted garlic, rosemary, and pecorino.
Starch-on-starch isn’t a popular combination, but in this application, the crisp crust contrasts with the creamy potato. Mozzarella augments the richness, while the classic combination of garlic and rosemary provides savory complexity. A generous sprinkling of grated parmesan boosts both the umami and adds a touch of salt, the potato’s best friend.
