Prep & Pastry To Open Eastside Location Alongside New Sauce Pizza & Wine

Fans of Prep & Pastry will soon be seeing double with a second location planned on Tucson’s east side by this time next year.

Co-owner Nathan Ares said he and his partners are in the early stages with local architects to build a new Prep from the ground-up, in an empty lot just east of Zinburger, 6390 E. Grant Road.

When completed, the restaurant will sit at about 2,800 square feet and will share a building with what will soon be Tucson’s fourth Sauce Pizza & Wine.

The news follows the debut of Commoner & Co., a lunch-and-dinner spot launched by Prep & Pastry owners at 6960 E. Sunrise Drive in early June.

The new Prep will keep the same menu items as the original location, which continues to do a brisk business on North Campbell Avenue.

Ares said they debated back-and-forth as to whether they should open the new Prep on the east or northwest side of the city.

“We love the east side,” he said. “We thought we would try it out on that side of town first, to see what happens.”

Amid the new planning and construction, Ares said they are working to tighten up the service and menus at the original Prep & Pastry location, as well as at Commoner & Co.

The original Prep will also go through a brief closure in the coming months to expand its kitchen.

Ares said the timing is just right for the new Prep to open next summer.

“It gives us time to organize Commoner and make sure the original Prep is going the way we want,” he said.
