OBON, Goodness Team Bringing Modern Southern Concept “BIRD” to Casas Adobes

Fukushu Restaurant Concepts, the team behind OBON Sushi Bar Ramen and Goodness Fresh Food & Juice Bar will open BIRD Southern Table & Bar at Casas Adobes Plaza in the former Frogs Organic Bakery at 7109 N. Oracle Rd. this November.

“We’re using all of the ingredients we can in a southern way in an approachable atmosphere,” said Fuskushu partner Brandon Katz.

The restaurant, designed by a23 Studios and Fukushu partner Andre Joffroy will feature a “classic Americana design” using natural brick and reclaimed local wood.

Chef Daniel Thomas, formerly of 47 Scott, The Abbey, and Jax Kitchen, will lead the kitchen to showcase high-quality meats, seafood, and seasonal local produce.

Dishes will include modern interpretations of classic southern staples such as smoked bacon whipped deviled eggs, chicken and waffles, and fried green tomato with house-made pimento cheese, corn relish and balsamic reduction.

Other dishes to look out for include:

  • Braised Short Rib with lemon confit potato, roasted heirloom carrots, collard greens
  • Baby Black Kale with bacon vinaigrette, charred peaches, pickled shallot, fried egg

OBON mixologist Matt Martinez, who previously tended bar at Scott & Co. and Nox Kitchen + Cocktails, will whip up cocktails with exclusively in-house additions. Wine and local craft beer will also be available.
