Chefs Matthew Kraiss, Coralie Satta, and Kenneth Foy read and respond to their bad reviews

Responding professionally would usually be ideal for maintaining customer relations, but in Chefs Read Bad Reviews, anything is fair game.

In the inaugural episode of this series, chefs Matthew Kraiss, Coralie Satta, and Kenneth Foy read and respond to their bad reviews.

Kraiss recently took on the role of executive chef at Thunder Canyon Brewstillery in April and incorporated a scratch kitchen concept. Recent bad reviews were mainly centered around the dramatic changes to the menu.

Chef-owner Satta of Ghini’s French Caffe often responds to negative reviews with her best foot forward and a chance to redeem herself. But here, no sass is held back.

For chef-owner Foy of Dante’s Fire, some customers questioned his use of fresh ingredients. Foy openly explains and defends his dishes and ingredients in use, especially his San Marzano tomatoes.
