Move over cookie butter, it’s time for cookie salsa to shine.
If you’ve ever eaten at BOCA Tacos y Tequila, you already know Chef Maria Mazon experiments with salsas daily. Chipotle and peanut butter, blackberries and peanut butter, she can make it work.
Now that Mazon has batches of Girl Scout Cookies, she’s adding her magic touch for balanced salsas with body, complexity, and a touch of bright acidity.
“It’s just something fun,” Mazon said. While boxed cookies aren’t winter white truffles, they’re still a “seasonal ingredient” to play with.
“The Thin Mints made me think of mole,” Mazon said. “Some people add herbs to their mole, and I add epazote to mine, which tastes similar to mint.”
Savannah Smiles cookies feature a strong lemon flavor, which Mazon paired with basil for a summery freshness.
Mazon is slowly simmering Samoas with tomato and onion for a twist on pico de gallo.
“The cookies eventually disintegrate and thicken the sauce,” Mazon said. “And the coconut flavor really comes through.”
Like Mazon’s other salsas, these will be available for a limited time. So, if you’re heading over specifically for these salsas, perhaps call first.
