Fukushu Restaurant Concepts’ Southern restaurant, BIRD Modern Provisions & Bar, launched its new menu on Wednesday.
The dinner menu received modest updates with tweaks to existing dishes and a few new dishes. For example, the Ribeye steak entree has been replaced with the Steak Frites ($23), which now features a flat iron steak with fries and chimichurri.
Two completely new additions are the Cioppino ($28) with mussels, shrimp, white fish, potato, fennel, and crispy bread along with the Butternut Squash Risotto ($15) with wild mushroom, sun-dried tomato, chive oil, and hazelnuts (add shrimp for $9).
The cocktail menu features creative concoctions that serve more as homages to drinking traditions rather than recreations of classic cocktails. In addition to a couple of julep cup-bound cocktails, sangria and a Paloma-inspired highball join the fray.
Terroir Julep ($12)
AZ Distilling Commerce Gin, Bacanora, local honey, muddled rosemary, lavender oil, lemon oils

Mel’s First Word ($12)
Mezcal, reposado tequila, local honey, Yellow Chartreuse, cilantro tincture

Transatlantic Sangria ($10)
House-made falernum, dark rum, Curacao, passion fruit, vanilla, red wine

Peach Tea Old Fashioned ($10)
Cardamom and black tea infused bourbon, arrack, peach liqueur, turbinado sugar, milk-washed

Catalina Highball ($10)
Vodka, prickly pear juice, tamarindo, lemon juice, chamoy + Tajín
