There’s something special about waking up in the mornings. Get a little stretch in and wipe the sleep from your eyes — it’s a brand-new day with new opportunities to eat something spectacular.

However, sometimes that grumblin’ in your stomach can be intense and you need something to eat pronto. Guadalajara Original Grill, known for its tableside salsa, hefty margaritas, and large platters of Mexican cuisine, is coming in clutch with its breakfast menu.

The breakfast menu is small but mighty, available daily from 11 a.m. – 3 p.m. — just five entrees and an omelet menu with multiple variations of folded egg masterpieces.

The following dishes are available at both Guadalajara Original Grill locations: 1220 E. Prince Rd. and 7360 N. Oracle Rd. (not associated with the other Guadalajara Grills in Tucson).

Chilaquiles

Two eggs served over fresh corn tortilla strips simmered in salsa rojo and topped with queso fresco, avocado slices, and crema drizzle, served with a side of refried beans or seasoned potatoes

Omelets are prepared with three eggs and cheese inside, all served with a side of refried beans or seasoned potatoes

Three Breakfast Tacos

Scrambled eggs served on fresh corn or flour tortillas, topped with mixed cheese and pico de gallo, served with a side of refried beans or seasoned potatoes

Full Breakfast Menu (11 a.m. – 3 p.m. daily)

Breakfast Entrees

  • Chilaquiles ($11.95) – Two eggs served over fresh corn tortilla strips simmered in salsa rojo and topped with queso fresco, avocado slices, and crema drizzle, served with a side of refried beans or seasoned potatoes.
    • Add shredded beef, chopped bacon, or chorizo for $2 each. Add carne asada for $3
  • Huevos Rancheros ($11.95) – Two eggs over fresh corn tortillas coated with refried beans and cheese and topped with ranchero sauce, avocado slices, queso fresco, and crema drizzle.
    • Add shredded beef, chopped bacon, or chorizo for $2 each. Add carne asada for $3
  • Huevos a la Mexicana ($10.95) – Three eggs with fresh pico de gallo and a side of two fresh tortillas, served with your choice of refried beans or seasoned potatoes.

  • Breakfast Burrito ($10.95) – Three scrambled eggs, cheese, and pico de gallo wrapped in a massive flour tortilla and served with a side of refried beans or seasoned potatoes.

    • Mexicana ($11.95) – Diced tomatoes, onions, cilantro, and jalapeños
    • Chile Verde ($12.95) – Savory pork simmered in verde tomatillo sauce
    • Chile Colorado ($12.95) – Tender beef cooked in mild chili rojo sauce

At a very young age, Matt Sterner was gifted with the artistic ability to masterfully roll a burrito to the highest of standards, but the wrapped medley of delicious innards wasn’t his first love. Matt’s first true love was a combination of reading, writing, and creating. He grew up reading comics, the ingredients list of his shampoo and conditioner bottles, choose-your-own-adventure books, and the Scrabble dictionary — something he found useful when challenging his grandmother to a game.

He attended college at New Mexico State University and graduated with a degree in Digital Filmmaking. One of his favorite classes was screenwriting because he became responsible for the story’s birth before it came to life on-screen. After school, Matt took on numerous positions at a local television station in Tucson. From dealing out stories about heartbreak to producing “fluffier” content for a lifestyle broadcast, he learned what it takes to adapt to the many emotions the world of media can stir. Since 2017, Matt has dabbled in the culinary world of Tucson as well as San Diego, California from time to time.

Phoenix restaurateurs Armando Hernandez and chef Nadia Holguin, a James Beard-nominated duo originally from Chihuahua, Mexico, are behind the restaurant.

Tortillas Chiwas is currently open Thursdays through Saturdays from 5–10 pm with 38 seats. Reservations are available on OpenTable.
