Bunny Ciao has opened inside Hotel Lindo, bringing a fast-evolving Italian fusion concept to downtown Tucson. The 600-square-foot restaurant officially opened to the public on Wednesday, April 8, at 485 S. Stone Ave., blending global influence with local sourcing and a compact, design-forward space.
A concept rooted in global influence
Owners Lourens and Sandy Du Plessis bring an international perspective to the project. The couple hails from Cape Town and previously operated a large supply chain business in South Africa. In 2024, they opened Unicorn Zebra.
Bunny Ciao draws its name from customer interactions at Unicorn Zebra, said executive chef Justin Rodriguez. Guests often referenced the South African dish bunny chow, which sparked the concept. From there, the team leaned into an Italian fusion direction that felt natural for the brand.
Chef Justin Rodriguez leads the kitchen
Rodriguez anchors the menu with a strong Tucson foundation. He grew up in Tucson and built his experience working alongside some of the city’s top chefs. As a result, the menu reflects both local influence and broader culinary exploration.
Additionally, Rodriguez developed the menu using dishes and techniques he refined over the years. He focused on bold flavors and approachable execution. The kitchen also partners with local vendors, including Hidden Hearth and SouthWinds Farm.
Menu highlights and pricing
Bunny Ciao offers a concise menu with a focus on house-made elements and comfort-driven dishes. The pasta is made in-house, reinforcing the restaurant’s commitment to quality.
Notable dishes include mushroom arancini, duck fat fries, and a caprese burger. Each item emphasizes flavor and balance rather than complexity. Prices range from $12 to $18 per dish, keeping the menu accessible.
A refined yet welcoming space
The team designed Bunny Ciao to feel refined while remaining approachable for families, Rodriguez said The space aims to welcome a wide range of guests, from hotel visitors to local diners. Additionally, the concept positions itself as a destination within Hotel Lindo.
The restaurant operates from 5 to 10 p.m. daily. Furthermore, the team plans to introduce brunch service once staffing expands. For now, dinner service drives the experience.
