East Tucson restaurant Fire N’ Smoke Wood Fired Pizza & BBQ announced Lindon “Lindy” Reilly, previously of Lindy’s on 4th Ave fame, has joined the team as partner-chef.
The duo has been working together to launch a menu on January 25 with updates to include more of Reilly’s flair.
“Pizzas are getting some ingredient upgrades and adjustments, but not a lot of changes from the original line-up for now,” Reilly said. “Pizza specials will be coming soon though.”
One of the new items will be a smoked pulled pork sandwich with a spiced orange bourbon marmalade, red onions, and pickles. Another sandwich will feature tri-tip with blue cheese, bacon, roasted green chilies, and raspberry preserves.
“The burgers got a major overhaul and I’ve developed a new burger sauce for Fire N’ Smoke,” Reilly said.
While the menu will feature a classic diner-style smashed burger, Reilly’s creativity also shines through.
“The Pizza Burger is 100% on the menu,” Reilly said. “Two mini pizza for buns. I’ve been wanting to do this type of burger for a long time. It’s finally a reality.”
Additionally, the appetizer menu will double as a small bites menu for the Cowpony Bar, which partner Jay Healy also owns.
