By popular request, Tucson Foodie has started a series of vegan meals on Mondays. Look out for our meatless meal of the week each Monday.
Although Tucson is home to beautiful Sonoran flour tortillas, they aren’t necessary for a fantastic taco.
As a matter of fact, you don’t even need a tortilla.
At Renee’s Organic Oven, the gluten-free and vegan Lettuce Taco Board features romaine lettuce, organic black bean hummus, zucchini noodles, salsa fresca (pico de gallo), and avocado.
The cool, crisp romaine makes a light, refreshing substitute for a tortilla. It also doesn’t get soggy from salsa. The hummus and zucchini provide body, complemented by the rich avocado and chunky salsa fresca featured in these vegan tacos.
