“One of my favorite pasta shapes is Lumache, which means snails in Italian,” said Chris Curtiss, corporate chef at North Italia. “Its shell-like shape with ridges on the outside makes this pasta like individual spoons for hearty sauces, making every bite the perfect bite that bursts with flavor. My favorite way to enjoy Lumache is with cream-based sauces.”

The Breakfast Carbonara is currently on the menu and now comes with the lumache. The Braised Short Rib Lumache and Squid Ink Tonnarelli will hit the menu on Wednesday, October 26.

Read on for an overview of the latest additions.

“I really love Tonnarelli, which mimics the classic Spaghetti alla Chitarra that is well known in the Abruzzo region of Italy,” said Curtiss. “Tonnarelli differs from traditional Spaghetti because of its squared cross-section, whereas Spaghetti is round. This pairs perfectly with a tomato-based sauce because of its robust mouthfeel, plus it’s easy to eat. For our new fall menu, we’re elevating this pasta shape further by creating a squid ink version.”

IOU Sushi III has closed. The all-you-can-eat sushi restaurant on North Oracle Road announced the news on Facebook after about 10 years in Tucson. “This is the hardest post I’ve had to write,” the owners said. The post continued, “we have met some great friends who have become family to us.” Tucson Foodie first visited the restaurant in 2017, when it operated as IOU Sushi IV.

Anne Rysdale built @sheltercocktaillounge in 1961 with concrete walls, lava rock, and Cold War nerves. Today, owners Pam Santangelo and Kevin Breutzmann keep the Tucson bar exactly as regulars remember it. Inside, martinis share space with JFK memorabilia, a vintage atomic chandelier, and a suit of armor named Charlie. “Tucson is changing so much, but this has stayed the same. It’s a time capsule,” Santangelo said.
