Unraveled Pasta + Bar plans to open in spring or summer 2026 in the east end of The Village at Sam Hughes at 2527 E. Sixth St., which previously held Ampersand Old & New.
Husband-and-wife team Sally and Glenn Murphy, who also own the Cork Tucson and UnCork’d Kitchen & Cocktails, own and operate the concept.

European inspiration, Tucson sensibility
The Murphys drew inspiration from a neighborhood restaurant they previously owned in Perth, Australia.
“I’ve been waiting for the right time and place to launch the concept in the U.S., and this is it,” Glenn said.
The restaurant’s logo was drawn by the Australian owners’ six-year-old niece. Inside, guests can expect a whimsical mural inspired by a European village.
An elevated pasta experience
Unraveled Pasta + Bar will offer a customizable pasta menu paired with attentive table service. Guests will choose from several house-made pastas, proteins, and sauces.
The Murphys describe the concept as an elevated pasta experience. House-made pasta, crafted in front of guests, will serve as the restaurant’s signature.
Each night will also feature two or three non-pasta dinner specials. European-style coffee will round out the menu.
Designed for the Sam Hughes community
Unraveled Pasta + Bar will occupy a 2,200-square-foot space with approximately 65 seats, including a 14-seat bar.
The neighborhood shaped nearly every decision, Sally said.
“I rented three different homes a total of 4 different times during college and after graduating from the University of Arizona,” she said. “I truly love this neighborhood.
She added that Sam Hughes brings together students and longtime residents. The restaurant’s pricing will remain low to moderate.

Unraveled Pasta + Bar plans to operate daily from 3 to 10 p.m.
The team will work with a local architect and local vendors.
